Our story.

Welcome home.

Meet Rens and Gijs. Born and raised in Brabant, shaped at Smelt Amsterdam. Two true Burgundians with a great passion for gastronomy. Together, they gathered courage, cast-iron pans, and a hefty amount of Gruyère and took Restaurant Smelt southward. They melt their cheeses in none other than the Korte Putstraat in ‘s-Hertogenbosch. Feel at home!

Our fondues are made with the finest French, Dutch, and Swiss cheeses from De Kaaskamer in Amsterdam. Each cheese is personally and carefully tasted, selected, and melted. We serve this along with artisanal sourdough bread and fresh seasonal vegetables.

Frequently asked questions.

What about cheese fondue during pregnancy?

The fondues at Restaurant Smelt are made (partially) from raw milk hard cheeses. During aging, the lactose in these cheeses is completely broken down, which prevents the listeria bacteria from surviving. Only the Italian and French fondues contain soft raw milk cheese, so these are not suitable for pregnant women.

Does Smelt’s fondue contain alcohol?

At Restaurant Smelt, we cook with wines that have a low alcohol content (0.5%). During cooking, some of the alcohol evaporates, reducing the alcohol percentage even further. Our beer fondue(s) contain higher alcohol percentages and are therefore not suitable for pregnant women.

What about lactose in cheese fondue?

During the aging of hard cheeses, the lactose, or milk sugars, in our fondue cheese is completely broken down.
